A typical Gujarati Thali consists of Rotli, Dal or Kadhi, Rice, and Sabzi (a dish made up of several different combinations of vegetables and spices, which may be either spicy or sweet). Gujarati cuisine varies widely in flavour and heat, depending on a family's tastes as well as the region of Gujarat to which they belong. Many Gujarati dishes are at the same time sweet, salty, and spicy .
1) Dhokla
It is made with a fermented batter derived from rice and chickpea splits. Dhokla can be eaten for breakfast, as a main course, as a side dish, or as a snack. It can usually be bought from a sweet shop.
2) Lilva Kachoris
These Kachoris are stuffed with baked mixture of pigeon peas (lilva bean) or urad dal (crushed and washed horsebeans), besan (gram flour), black pepper, red chilli Pd, salt and other spices and deep fried until done.
3) Khaman
It is mostly served with roughly chopped onions, sev, fried chillies sprinkled with salt and chutney. In some shops it is also served traditionally in a large green leaf. Sometimes it is also garnished with scraped coconut.
4) Keri no ras
Aamras is also a traditional Gujarati dish.It consists of sugared mango pulp, which is passed through muslin to remove fibrous strands of the fruit.It is commonly eaten with rotli or pooris.
5) Gujarati Kadhi
Kadhi or karhi is a spicy dish whose thick gravy is based on chickpea flour. In Gujarat, it is usually served with khichdi, roti, parantha and rice. It is considered a light food.
6) Undhiyu
It is a Gujarati mixed vegetable dish that is a regional specialty.The name of this dish comes from the Gujarati words "matlu" meaning earthen pot and "undhu" meaning upside down since they have been traditionally cooked upside down underground in earthen pots fired from above.
7) Doodhpak
It is a dessert dish, a kind of rice pudding made from milk, rice, saffron and nuts, accompanied by pooris.The milk is slow-boiled to thickened and sweetened and the dish is garnished with chopped almonds.
8) Handvo
It is a baked dish made from various dals and rice, sesame and spices. It is often made with a bottle gourd filling, though a lot of other vegetables can be added.Sometimes crushed peanuts are also added.
9) Khandvi
It is yellowish in color and has the appearance of tightly rolled bite-sized pieces. It is primarily made of gram flour and yoghurt which is slowly cooked into a paste. The mixture is then spread out to cool, cut, and rolled into cylindrical shapes. The mild taste and soft texture make it a popular snack amongst adults and children alike.
10) Dal Dhokli
It is a spiced whole wheat dumplings simmered in a lively curry made with tuvar dal, garlic, peanuts, kokum and turmeric.
