The cuisine of Kerala is linked in all its richness to the history, geography, demography and culture of the land. Kerala cuisine has a multitude of both vegetarian and non-vegetarian dishes prepared using fish, poultry and red meat. Owing to the weather and the availability of spices, the Kerala cuisine is richly spicy especially the hot ones -chili, black pepper, cardamom, cloves, ginger, and cinnamon.
1) Thalassery biryani
It is a rice-based dish blended with spices and chicken. As it is the only biriyani recipe in Kerala cuisine,it can also be called Kerala biriyani.
2) Fish Moilee
It is a spicy fish and coconut dish which is cooked in coconut milk and spices. The flavour is light, yet spicy with a good bit of green chillies in the mix. Each household in Kerala will have their own version of course.
3) Pearl Spot – Karimeen Fry Kerala Style
It is a sought after delicacy in Kerala. The pearl spot fish is marinated in a mixture of lemon juice, red chillies, other ingredients and deep fried until crisp and golden brown. 4) Poduthol
It is generally had with cooked rice during lunch and dinner. It is a customary dish in weddings and other ceremonies.
5) Injipuli
It is a dark brown Keralite curry made of ginger, green chillies and jaggery. It is also a part of Tamil Nadu cuisine. It is also known as Puli inji in some parts of Kerala.It is served as part of the Sadhya, or virunthu by the Tamil community.
6) Prawns Kuzhambu
Prawns Kuzhambu with Onion Tomato and Coconut is an excellent dish cooked in onion, tomato, coconut and tamarind sauce. This is just like a Kuzhambu made in southern India.
7) Jackfruit Poriyal

8) Kaalan

It is a dish that is part of the Kerala cuisine. It is prepared from white gourd, coconut milk and ginger seasoned with coconut oil. Olan is usually served as part of a Sadhya.
10) Avial
It is a dish that is common in Kerala as well as Tamil cuisine and Udupi cuisine. It is a thick mixture of vegetables and coconut, seasoned with coconut oil and curry leaves. Avial is considered an essential part of the Sadya, the Keralite vegetarian feast.
